Roaster Phil's wife Holly works in the restaurant business and is a great cook. Her version of the classic Italian dessert works well with any Coastal Peaks dark roasts, especially the espresso roasts.
16 oz. good quality Mascarpone cheese
6 egg yolks
1 cup sugar
1 cup heavy whipping cream
1 cup strong brewed Coastal Peaks coffee
Sweet Marsala to taste
Dutch cocoa or shaved chocolate
For the Mascarpone filling
Let the Mascarpone cheese soften to room temperature.
Whip egg yolks together until smooth, creamy, thick and very stiff.
Gently fold egg mixture into cheese, incorporating air,
but not beating it or it will get lumpy.
Whip heavy cream and remaining 1/2 cup sugar together until very stiff.
Fold into the Mascarpone mixture.
For the Tiramisu
Mix coffee with the sweet Marsala (and additional sugar, if desired, to taste).
Arrange a tight layer of lady fingers into the pan
and drizzle with coffee mixture.
Do not oversoak the cookies or they will get soggy.
Evenly spread some mascarpone mixture over the lady fingers.
Repeat layers, ending with a mascarpone layer.
Cover with cocoa powder or shaved chocolate.
Refrigerate for at least one hour (preferably longer) before serving.
Serve with cups of Coastal Peaks coffee for an extraordinary dessert!
